Jamaican Bread Pudding

9 to 10 Slices of bread
1 cup Dried fruit (raisins etc.)
3 tbsp Mixed peels.
1/2 cup Brown sugar
4 tsp. Mixed spices
1/4 cup Soft butter or Margarine
Caster or Powdered sugar for sprinkling



Grease a 7-inch or 18cm round cake pan or 6-inch. square pan or over proof dish. Soak the bread in cold water for at least 30 minutes. Squeeze the bread by hand or in a sieve to expel as much water as possible, then beat with a fork to remove any lumps.      Add the remaining ingredients and mix thoroughly. Put the mixture into the greased pan or dish and bake in a moderately hot oven for about 1 1/2 hours.

On completion sprinkle liberally with castor or powdered sugar, excellent when served hot with custard or cold with ice cream, or simply eat to your delight.

bullet4 to 5 Slices of bread and butter with crust removed
4 tbsp currants
1 cup granulated sugar
1 egg
1 1/4 cup Milk


Cut the buttered bread into small pieces and place in a greased pie dish with currants sprinkled between the layers. Beat the egg, sugar and milk together with a folk and pour over the bread. Leave to stand for 15 minutes. Bake in a moderate oven for 30-40 minutes.
